It's really very simple: great wine should only ever be about enjoyment an experience;
to drink marvel, revel and savour, as an exquisite accompanient to the
flavours and textures of your desired dish-and all your chosen company.
The total 'Gourmet' experience! Going about choosing wine that you'll
enjoy is much tougher however, although always enjoyable, because everyone
has different palates, likes and dislikes. Also some wines, though fine
as apertitifs, taste sour with certain foods-seafood for a tropical example.
So I have tried to incorporate a varied selection of styles, grapes,countries
of origin textures and tastes to suit all-comers with the vast majority been
wines that tend to show well with food for obvious reasons. If, however you
have a personal favourite that I've missed, come and tell me, I love totalk about
wine and it will give me an excuse to have another
winetasting -its a hard life been a Sommelier.

So what to choose with your food? The classic general method is white for starters
and fish, red for red meat, dessert wine for dessert, Port with cheese and a Cognac
or other digestif with coffee.But lets delve a little deeper if i may and make a few
suggestions. I like to start with Champagne as it makesa great aperitif and
it compliments most starters. Sauvignon's good with spices, fruit and fish -we've
got a superb Sancerre in full and half bottles and two 'New World' from
South Africa and New Zealand. Muscadet marries perfectly withshellfish and is a
personal favourite. The Salento Rosso and Malbec go well with red meat as does Amarone,
but why nottry something different, the Greek wines are both excellent
or the wonderful Bogle.

As for desserts, how about the dessert wines we have on offer. I wasblown away by the
taste-bud sensation when I first had a dessert wine.But whatever you choose, I hope you"ll
have a wonderful meal thatsfull of 'Gourmet' enjoyment and if I can be of any service you only
